We all need practice time
If you want to be good at something then practice. So I did. I tested some recipes this weekend and thought I would share. I am gearing up for a very busy grilling season. With events filling my calendar, I needed to play with some food. So we packed up some coolers and I went over to my Southside kitchen. We have a new Big Green Egg, in a cool island and pergula that all needed some testing. The weather was nice until the wind started to blow, then it got chilly. Early Spring grilling, you have to be ready for that. The three recipes that I think have some promise are the Jerk dusted Mahi with Jerk sauced asparagus. We also liked the Goat cheese roasted peppers with grilled endive and the Grilled-ground lamb steaks with mango chutney

Can you think of any other holiday that brings just as many people together, and it’s NOT about the food? Irish cuisine isn’t exactly the most celebrated. The base ingredients are simple and so are most Irish recipes. The food is mostly good, but not great, not inspiring. This is the one day that I can celebrate with everyone else. I can drink Guinness, eat simple food, at best; and no one, I mean no one plans a party today needing the expertise of a Professional Chef. They need bartenders and fry cooks. Lots of them! This means I can spend time with my family and friends. I will spend the rest of year cooking for other clients’ celebrations, weddings, holidays and client appreciation dinners. I will do cooking classes, teambuilding events, and at some point travel to someone else’s vacation home to cook for a week. This is my day. Just like everyone else, except the fry cooks and bartenders, I will celebrate the beginning of spring, the health of my family and the inspiration of my friends. Happy Day!
